High Protein, Low Sugar Desserts for Weight Loss Surgery Patients
We are in the middle of the holiday season and everyone seems to be indulging. Don’t feel left out! Even though we recommend limiting sugars after the Sleeve Gastrectomy, the Lap-Band and especially after the Gastric Bypass, everyone wants to serve a special dessert when guests arrive. These treats are high in protein and low in sugar but do not compromise flavor.
Chi-Chi-Chi Chia Panna Cotta
(makes 6 servings, about 80 calories and 11 grams of protein)
1 envelope unflavored gelatin
3 TBSP Splenda
¼ TSP salt
½ cup skim milk
Seeds of ½ vanilla bean
2 cups Greek yogurt
1 TSP lemon zest
1 TSP fresh lemon juice
2 TBSP chia seeds (optional, but not nearly as fun)
In a small pan, stir together gelatin, Splenda, salt, milk and vanilla and let stand a few minutes. Heat on low heat until simmering and gelatin dissolves. Add mixture to a blender with the yogurt, lemon zest and lemon juice. Give it a quick blend. Divide mixture into 6 small glasses and cover with plastic wrap. Chill overnight in fridge and top with a sprinkling of chia seeds.
Ooh La La! Dark Chocolate Mousse
(makes 6 servings, about 220 calories and 10 grams of protein)
1 small fresh brewed espresso coffee
3 Lindt 70% Cocoa Chocolate bars (3.5 OZ each)
¼ cup rum
6 XL egg yolks
1 pinch of salt
6 XL egg whites, whipped to a soft peak
In a large bowl, add chocolate in pieces and melt in microwave. Add coffee. Stir in the rum. Whip in the egg yolks. Fold in the egg whites with a rubber spatula, making sure that no unmixed chocolate mixture has fallen to the bottom of the bowl. Divide into 6 ramekins and cover with plastic wrap. Chill at least 6 hours or overnight.
Pumpkin dream
(makes 6 servings, about 100 calories and 9 grams of protein)
¼ cup Grand Marnier
1 envelope unflavored gelatin
1 small can of pumpkin
â…“ cup Splenda
2 XL egg yolks
¼ TSP nutmeg
½ TSP cinnamon
½ TSP Kosher salt
½ cup nonfat dry milk
½ cup skim milk
4 XL egg whites, whipped to a soft peak
Add gelatin to Grand Marnier to soften and set aside. In a large bowl, whisk together pumpkin, Splenda, egg yolks, spices, salt, dry milk and skim milk. Heat gelatin mixture until clear and whisk it into the pumpkin mixture. Fold in the egg whites with a rubber spatula. Divide into 6 ramekins and cover with plastic wrap. Chill for at least 6 hours or overnight.
